Curry Chickpea Sandwich

Transform your lunches with this sandwich. It's so easy to make and so filling!


Makes 1 sandwich

Ingredients

- 1/4 cup mayonnaise or greek yogurt

- 1 tbsp lemon juice

- 1/2 bell pepper, finely diced

- 1/2 red onion, finely diced

- 2 tbsp olive oil

- 2 tsp curry powder

- 1 garlic clove, smashed

- 1/2 tsp pepper flakes (or to taste)

- 1/2 can (~3/4 cup) chickpeas, drained

- salt and pepper

- spinach (optional)

- 2 slices of bread





Method

  1. Dressing: In a small bowl, combine 1/4 cup mayo or greek yogurt, 1 tbsp lemon juice, 1/2 bell pepper, 1/2 red onion, 1/2 tsp salt and pepper. Mix to combine.

  2. Put a medium-sized pan on the stove over medium-high heat. Add 2 tbsp olive oil and heat for 3 minutes. Add 2 tsp curry powder, 1 garlic clove, and 1/2 tsp pepper flakes (if using). Toast spices for 2-3 minutes, until they are fragrant. Add 1/2 can chickpeas to the pan and stir, making sure the chickpeas are coated evenly with the spices. Season with salt and pepper. Cook chickpeas untouched for 2 minutes.

  3. Remove chickpeas from heat and place into a mixing bowl. Remove the clove of garlic. Use a fork to mash the chickpeas into a coarse mixture. Leaving some of the chickpeas whole gives the filling good texture. Let cool for a few minutes, then add dressing to the bowl. Mix thoroughly until all the chickpeas are coated. Taste the mix and adjust acid/salt as needed.

  4. To assemble: on one slice of bread, spread the chickpea mix in an even layer. Then if using, add a thin, even layer of spinach. Add the rest of the chickpea mix on top and sandwich with the second slice of bread. Wrap it up to take with you, or enjoy right now!
