At the end of the week when the avocados are soft, pairing them with a pantry staple makes for a hearty meal.

Chickpea Avocado Sandwich
Makes 1 sandwich

Ingredients
- 1/2 can chickpeas, drained
- 1 ripe avocado
- 1/2 onion, very finely chopped
- 1 tsp oregano
- 1 tsp salt
- ground black pepper, to taste
- lemon juice
- baby spinach
- pickled onions (optional)
- 2 slices bread
Method
In a medium bowl, mash 1/2 can chickpeas and 1 avocado. Mix in 1/2 onion, very finely chopped, 1 tsp oregano, 1 tsp salt and ground black pepper. Squeeze in some lemon juice. Start with a tablespoon, then taste and adjust as necessary.
Spread half of the mixture on each slice of bread. Add an even layer of baby spinach on one side. Add a few pickled onions on other side (if using). Smush together and cut in half on an angle.
