Chickpea Avocado Sandwich

I pack this almost once a week, it's the sandwich you didn't know you needed. Full of greens and super filling, this just hits the spot at lunch time.

How Does this fit in with the Grocery Haul?

At the end of the week when the avocados are soft, pairing them with a pantry staple makes for a hearty meal.

Chickpea Avocado Sandwich

Makes 1 sandwich

10 minutes


- 1/2 can chickpeas, drained

- 1 ripe avocado

- 1/2 onion, very finely chopped

- 1 tsp oregano

- 1 tsp salt

- ground black pepper, to taste

- lemon juice

- baby spinach

- pickled onions (optional)

- 2 slices bread


  1. In a medium bowl, mash 1/2 can chickpeas and 1 avocado. Mix in 1/2 onion, very finely chopped, 1 tsp oregano, 1 tsp salt and ground black pepper. Squeeze in some lemon juice. Start with a tablespoon, then taste and adjust as necessary.

  2. Spread half of the mixture on each slice of bread. Add an even layer of baby spinach on one side. Add a few pickled onions on other side (if using). Smush together and cut in half on an angle.

  3. Enjoy!
