Apple Pie Blender Pancakes
Makes 3 pancakes
15 minutes
Ingredients
- 1/2 cup rolled oats
- 1/2 cup unsweetened applesauce
- 1 egg
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1 tbsp yogurt (or 1 tsp lemon juice)
- neutral oil for frying pancakes
Method
Add the rolled oats to a blender. Blend on high until a fine flour is formed. Add in the rest of the ingredients and blend again until it has a batter-like texture. Make sure that everything is combined evenly.
To fry the pancakes, you can either work in batches using one small pan, or fit them into one large pan. Heat the pan on medium heat with 1 tbsp of oil per pancake in the pan. (If frying one at a time, add one tbsp of oil, if frying all three, add three tbsps). Let the pan heat for 3 minutes before adding the batter.
Spoon about a 1/4 cup of batter onto the pan. Note: do not adjust the heat here. Keeping the heat at medium will make sure the pancake is cooked through and the edges are brown and crispy.
Cook for about 2 minutes, or until the bubbles on the surface of the pancake start to burst. Flip and cook another 2 minutes.
Serve however you'd like! I usually add yogurt, maple syrup and cinnamon. Nut butter also is a great add on or some granola! Enjoy!
