Halloween Cookies

Filled with M&Ms and pretzels, these are the perfect salty/sweet treat for your Halloween baking.



What's in them?

I added M&Ms, crushed salted pretzels and caramel M&Ms to my cookies. I've also tried adding mini peanut butter cups before and they are great. Really it can be anything you want: chopped up Twix bars, Kit Kats, Reese's Pieces. I measure these by eye, but I included a measurement in the recipe. If you feel like you need to add more, don't hold back.


Why am I adding cornstarch?

Adding cornstarch to a cookie will give it a really nice chew. With so many textural mix-ins with this cookie, I think that a chewy base goes really well. Using brown sugar here will also help with that.

Halloween Cookies

Makes 12

Ingredients

- 1 stick butter, melted

- 1/2 cup white sugar

- 1/2 cup light brown sugar

- 1 egg

- 1 tsp vanilla extract

- 1 cup +2 tbsp all-purpose flour

- 1/2 tsp baking soda

- 2 tsp cornstarch (see note)

- 1 tsp salt

- 1 ish cup of M&Ms, or other sweet mix in.

- 1/2 cup of crushed pretzels, or other salty mix in.






Method

  1. In a large mixing bowl, whisk together 1 stick melted butter, 1/2 cup white sugar and 1/2 cup light brown sugar until combined. Crack in 1 egg and add in 1 tsp vanilla extract. Whisk again until light and bubbly.

  2. Add in the dry ingredients: 1 cup+2tbsp all purpose flour, 1/2 tsp baking soda, 2 tsp cornstarch and 1 tsp salt. Fold using a spatula until there are no more flour streaks.

  3. Add your mix-ins and fold again until they are evenly distributed.

  4. Preheat your oven to 350ºF. In the meantime, put your cookie dough in the freezer and line a baking tray with parchment paper. Because this recipe uses melted butter, this will help keep your cookies' shape and texture in the oven.

  5. When the oven is preheated, using an ice cream scooper or your hands, make 2 tbsp-sized balls and place on the prepared baking tray 2 inches apart. Tip: for looks here, it's nice to stick a few M&Ms and pretzels on top.

  6. Bake for 12-14 minutes, until cookies are just starting to turn brown. Let cool on the pan for 5 minutes, then transfer to a cooling rack.

  7. Enjoy while watching a scary movie.
